Indian Fry Bread Recipe Using Fresh Fenugreek Leaves

Indian fry breads are commonly known as ‘poori’ or ‘puri’ in Hindi. Many a time they are a meal in themselves. Here is a simple Indian fry bread recipe which uses fresh fenugreek leaves as a main ingredient. This Indian fry bread recipe not only tastes excellent but also gives you the nutritional benefits of fenugreek.

Ingredients:

– 2 cups of wheat flour
– 1 cup of gram flour
– 1 cup of fresh fenugreek leaves (washed and chopped finely)
– 2 tablespoons of salt (adjust according to taste)
– 2 tablespoons of hot oil
– 1 tablespoon of cumin seeds
– A pinch of turmeric
– A pinch of asafetida
– Oil for frying
– Water for kneading the dough

Method:

  •  In a big kneading bowl, take the wheat flour and mix in the gram flour.
  •  Now add the salt and fenugreek leaves to the flours and mix well by lightly rubbing the ingredients together using your hands.
  • Leave the mix aside for 15 to 20 minutes. This is important because the fenugreek leaves shed water when they come in contact with salt. If you knead the dough immediately then it will get wet.
  • Now mix the flour and fenugreek leaves well and add the cumin seeds and asafetida into it. Mix well.
  • Make a hole in the center of the mixture and pour the hot oil in the middle.
  • Mix using a fork (be careful – if the oil is too hot you can burn your hand).
  • Now add water at room temperature to knead a soft dough.
  • Let the dough rest for some time.
  • Heat some oil in a frying pan.
  • Cut the prepared dough in small balls and roll the balls to 3-4 inches in diameter. It should not be too thick or thin (about 1/2 centimeter thick is more than enough).
  • Fry the bread in hot oil until golden brown on both sides and puffed.
  • Remove from oil and place on an absorbent paper towel to soak up the extra oil.
  • Serve warm.

Serving suggestions:

Fenugreek fry bread is a meal in itself and very filling. You can serve it with:

  • Tomato chutney
  • Mango or chili pickle
  • Potato and peas gravy or any other gravy of your choice
  • Raita (yogurt seasoned with cumin seeds, mustard powder, cucumber and tomatoes)

Indian fry bread is great to carry with you if you are going on a long journey. It can be stored for up to 10 days at room temperature without spoiling. Make sure that you use properly washed and fresh fenugreek leaves only.

Savoury Pumpkin Bread Recipe with Canned Pumpkin

Pumpkin is a versatile vegetable. It can be used in sweet as well as savory dishes. As the weather changes from summer to autumn, the delicious smell of pumpkin starts to fill the air and you know it is time to start experimenting with different recipes. Pumpkin is not just used for pies; it has many other uses such as pumpkin soup, squash, pumpkin gravy dish, cheesecake, pancakes and, of course, sweet and savory pumpkin bread recipe. Here is an easy to prepare pumpkin bread recipe with canned pumpkin that can be served as an entrée or a dessert.

What you will need (for one normal-sized loaf):

  • Canned pumpkin – 500 grams
  • Egg – 1 large
  • Vegetable oil – ⅓ cup
  • Water – ¼ cup
  • Normal sugar – 1 cup
  • All-purpose flour – 1 ¼ cups
  • Baking soda – ¾ teaspoon
  • Salt – ½ teaspoon
  • Powdered cinnamon – ¼ teaspoon
  • Powdered nutmeg – ¼ teaspoon
  • Powdered cloves – ⅛ teaspoon
  • Ground ginger – ⅛ teaspoon

Preparation:

  • Preheat the oven to 350°F or 180°C.
  • Grease a bread loaf pan with a little butter or oil and sprinkle some flour over it so that it covers the butter in a light film. Shake out the excess flour.
  • In a deep bowl, break the egg and add the sugar to it.
  • Using a blender or a food processer, whisk the egg and sugar mix to get a fluffy texture.
  • Add the vegetable oil and whisk some more.
  • For this recipe, you will need pumpkin puree. To prepare the puree, cut the canned pumpkin in small pieces and boil for a few minutes until tender.
  • Puree the pumpkin pieces in a blender then pass the puree through a sieve to get a smooth paste. Add water to this.
  • Mix this paste with the oil-egg-sugar mix and again blend well and set aside.
  • In a separate bowl, combine the measured flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
  • You can also add nuts and raisins of your choice at this stage.
  • Spoon this mixture, one spoonful at a time, in the prepared batter and whisk well.
  • Make sure that there are no pumpkin or flour lumps in the mix.
  • Pour the batter in the greased bread loaf pan evenly.
  • Bake in the preheated oven for 45-50 minutes.
  • At the end of the baking time, the top of the bread should be firm and springy.
  • Take the bread out of the oven and cool before cutting.

The oil keeps the bread moist for a long time and you can prepare the bread almost 2 weeks in advance.

Rye is a grain, which looks like wheat but has many additional nutritional properties. Rye is a good source of dietary fibers, magnesium and Vitamin B1. The intake of rye is good for a persons digestive health and helps reduce cholesterol. On your shopping list:

  • Water at room temperature -1 ½ cups
  • Olive oil or butter – 80ml
  • Table salt – 2-2 ¼ teaspoon (this is crucial to limit the rise of yeast)
  • Sugar – ½ cup (this is necessary for yeast rising)
  • Rye bread flour – 4 cups (you can also use a mix of wheat , refined and rye flour if you want to experiment)
  • Caraway seeds – ½ cup (adds the crunch)
  • Dried black bean flakes – ½ cup
  • MSG-  1 tablespoon (for taste but you can skip it)
  • Pepper (black or white) – 1 teaspoon
  • Ground herbs – 1 teaspoon
  • Active dry and fresh yeast – 3 tablespoons

 

Preparations

  • Check the bread pan in the bread machine and make sure that its free of contaminants.
  • There will be a blade attached to the bottom of the pan – make sure it is clean as well.
  • When you are using the bread machine, it will warm the ingredients and bring them to an even temperature. However, it helps if you use all the ingredients at room temperature and not too warm.
  • Put the wet ingredients such as water and oil (fat) in the bread bucket first. This will prevent the liquid from spattering the machines sides.
  • Now add the flour, salt, sugar, ¼-cup caraway seeds, dried black bean flakes, pepper, and the grounder herbs on top of the liquids.
  • Add the yeast on top and close the lid of the bread bucket.
  • Before activating the bread machine set the settings on the bread machine for the type of crust you want.
  • The bread machine will knead the dough, let it rest, and knead again before baking. You can sprinkle the rest of the caraway seeds once the dough is kneaded and ready to be baked.
  • Once the bread is done, take it out of the bread bucket and let it cool slightly before cutting into slices.
  • You can also add some garlic and nutmeg for a different flavour.

Rye bread is not gluten free therefor this is not recommended for infants younger than 12 months and people who are gluten intolerant (celiac).

Gluten Free Banana Bread Recipe Tinged With Lemon

Gone are the days when people who could eat gluten without any concerns could not only bake a traditional banana bread recipe and then enjoy them along with coffee cakes and the like. Gluten free recipes are very common these days. In fact, for various reasons not related to gluten intolerance they’re sometimes preferred by many others. Ingredients:

  • 2 cups of rice flour (you can also mix 1 cup of rice flour with 1 cup of buckwheat flour).
  • 1 tablespoon of lemon juice
  • 1 cup or margarine or butter
  • 2 tablespoon of margarine for greasing the bread mold
  • 3 tablespoon of baking powder
  • 1 ¼ cups of regular or brown sugar
  • 3 average sized ripe bananas
  • 4 large eggs
  • ½ teaspoon of salt
  • 4 tablespoon of icing sugar ( you can use normal sugar also but icing sugar gives more texture)

Preparation

  • Preheat the oven at 200 C.
  • Mash the bananas finely.
  • Mix 1 cup of butter with the mashes bananas and mix well.
  • Add sugar to this mix.
  • Add the eggs one by one to the mix beating well between each mix.
  • You should get a smooth mix. Add some vanilla extract to this (optional).
  • Sift together the flour, baking powder and salt.
  • Add the flour mixture to the banana-egg mixture and mix well. Make sure there are no lumps in the bread mix otherwise it will not cook evenly.
  • Grease a large bread baking can with almond oil or margarine.
  • Dust the inside of the can with rice flour so that the bread does not stick to the bottom and the sides.
  • Pour the mix in the can and spread evenly. Do not mix in the greased can.
  • Bake in the preheated oven for about 1 to 1 ½ hour.
  • Insert a skewer in the middle of the loaf and if it comes out clean then the bread is done.
  • Cool for 10 minutes.
  • Mix the icing sugar with lemon juice and drizzle over the bread loaf.
  • Let it cool completely before cutting.
  • You can store this bread for 2 weeks in an airtight container.
  • Serve with coffee or tea or eat as a snack.

Variations:

  • You can add various spices such as some dissolved coffee, nutmeg and cinnamon powder to the bread mix to add more flavor.
  • You can vary the quantity of lemon juice depending on how lemony you want the bread to be.

Stuffed Potato Indian Fry Bread Recipe

Here is an interesting Indian fry bread recipe that uses potatoes as a filling and can be served as a single dish for breakfast, lunch or dinner.

When it comes to bread recipe‘s potato is something that is used almost as much as rice in dishes and all over the world. It’s a safe bet to use in your preparations because both adults and children love eating potatoes.

Shopping list:

  • 2 cups of refined flour – 250 grams
  • Salt to taste
  • Oil- 300 mil for frying
  • Hot oil -20 ml for preparing the dough.
  • Water ½ liter to knead the dough
  • Carom seeds – 1 gram
  • Cumin seeds -1 gram
  • Potatoes -200 grams
  • Red chili powder – 2 grams (adjust according to taste). You also use red chili flakes or green chili.
  • Turmeric powder -1 gram
  • Garam Masala

Preparation:

The filling

  • Boil the potatoes until they are perfectly cooked and soft inside.
  • Peel, mash potatoes and add salt then mix well.
  • In a frying pan take some oil and heat it.
  • Add the cumin, carom seeds and green chilies (if you are using them) in the oil and let it cook for about ½ minute.
  • Take it off the heat and add the Garam masala, red chili powder and turmeric powder to it. The heat in the oil will cook the spices.
  • Pour the oil mix on the mashed potatoes and mix it well.
  • Brush 2 drops of oil on your palm and roll the potato mix into balls.
  • Cover and keep aside

The dough

  • Take the flour in a dish and add the hot oil to its center. Adding the oil will make the fry bread crispier and it will absorb less oil.
  • Mix oil, flour and salt to get a crumbly mix. Keep it aside for 15minutes.
  • Add water to the dough and knead a slightly hard dough. Don’t allow it be too wet otherwise it will be hard to fry.
  • Cut the dough in small balls and roll out the dough using a rolling pin. If you find it difficult to roll then brush 2-3 drops of oil to prevent it from sticking.

To fry

  • Put a scoop off potato mash into the middle of the rolled out dough and cover from all sides to make a ball.
  • Roll out the ball lightly to ¼ inch of thickness.
  • In a deep fry pan heat the oil to a smoking point and turn down the heat.
  • Put the rolled out patty in the oil one at a time and fry until golden brown on both sides.
  • Serve hot with tomato chutney or a thick gravy. You can cut it in stripes and serve with your favourite dip too.

Recipe:

  • Mix yeast with 2 tablespoons of milk and 1 tablespoon of water.
  • Add sugar to the mix and let it rest for 10 minutes
  • Once the yeast gets frothy, it is ready to use.
  • In the meantime, put the garlic cloves, green chili and coriander leaves in a blender and make a paste.
  • To prepare the dough melt the butter in the microwave.
  • Sieve the flours together in a mixing bowl.
  • Make a well in the middle and put the melted butter as well as the rest of the milk.
  • Mix with the flour lightly until you get a crumbly mixture.
  • Now slowly add the frothy yeast mix to the flour and knead the dough.
  • Knead well for at least 15 minutes. The dough will be a soft, smooth and sticky mix.
  • Do not add more flour otherwise the bread will be hard.
  • Cover and let the dough rest for 30-40 minutes in a cool place.
  • Knead again for 10 minutes and add the blended garlic mix.
  • Also add the grated cheese.
  • Grease a deep box shaped baking dish and put the dough in the dish.
  • Bake in a preheated oven at 220 C for 30 minutes.
  • Once the top is a nice light brown color, your bread is ready.
  • Let it cool slightly before you cut the bread.

Things to keep in mind when preparing garlic cheese bread recipe:

  • Always use fresh yeast
  • You can add any amount of herbs you want
